Hannibal finds it interesting that Will has essentially offered Alana the same choice that he would have: walk away, stay blind, stay alive. He is of course well aware of Will's (former) affections for Alana. It was one of the dynamics Hannibal played with when he seduced the doctor, to further isolate Will, further separate him from the support system that surrounded Jack Crawford's sway. There's satisfaction in how Will has essentially severed whatever relationship may have remained, with no explanation nor apology. It is likewise satisfying that while he leaves a message for Alana (however dismissive), there is no such message for Jack Crawford himself, or at least not one aside from the clear message left in Hannibal's home and on Hannibal's bed, that would be clear for all to see, likely in the morning when Will's message to Alana triggers an investigation. Of course, they will be in Paris by then, safe for a while from the reaches of those who would take their freedom.
